    目的:研究小红蒜中的矿质元素和黄酮含量以及抗氧化活性。方法:采用 ICP-MS 法同时测定小红蒜中矿质元素(Mg、Fe、B、Cr、Mn、As、Cu、Pb、Se、Zn、Hg、Ca) 含量,用超声提取 NaNO2-Al(NO3)3 显色法分析其总黄酮含量,再从DPPH·清除率、·OH 清除率和总还原力 3 个方面分析小红蒜的抗氧化活性。结果:选取元素中小红蒜样品中含有丰富的矿质元素,含量各不相同,但未检出 Zn、Hg、Ca 3 种元素。小红蒜总黄酮提取率为 1.97%,具有较好的 DPPH·和·OH 清除能力,清除率和总还原力均与总黄酮浓度成正相关。结论:小红蒜中矿质元素种类丰富,具有较好的抗氧化活性,可为后续开发食品添加剂、化妆品、保健品等提供一定的理论研究基础。

    Abstract:

    Abstract: Objective: To study the contents of mineral elements and flavonoids in eleutherine plicata herb and its antioxidant activity. Methods:ICP- MS method was applied to determine the contents of mineral elements in eleutherine plicata herb,which included Mg,Fe,B,Cr,Mn,As,Cu,Pb,Se,Zn,Hg and Ca. NaNO2-Al(NO3)3 was extracted by ultrasound. The content of total flavonoids was analyzed by color- developing method. Antioxidant activity of eleutherine plicata herb was analyzed from DPPH· scavenging rate,·OH scavenging rate,and total reducing power. Results:In the samples of eleutherine plicata herb,there were abundant selected mineral elements with different contents,but Zn,Hg and Ca were not detected. The extraction rate of total flavonoids of eleutherine plicata herb was 1.97%,with good DPPH· scavenging rate and ·OH scavenging rate;the scavenging rate and total reducing power were positively correlated with the concentration of total flavonoids. Conclusion: Eleutherine plicata herb has rich mineral elements and good antioxidant activity, which can provide a theoretical basis for the subsequent development of food additives, cosmetics, health products and so on.
